looking at 07 08 expys, what trim level should I look for?

You'll only find the climate controlled seats and the mutlizone air/heat on the Eddie Bauer and Limited trims. Not all Eddie's have the climate controlled seats, so you'll have to look carefully. I believe that all Limited's do come with these seats standard. But I could be wrong there.
The rear DVD you can find in all of the trims. I understand that option was available across the board.

The high trim lines are full of things like power 3d seat, power lift gate, self leveling suspension, power running boards, etc. All these things are discussed here when they break!
While I'd sure like to just set the temperature to 72°F and leave it I'm not willing to have to put up with the potential failures of the "fluffy" stuff.

Power 3rd is standard on the Limited and higher. You can get it on the lower trims for 2007/2008 models.
I think the 2009+ has the power lift standard on all trim levels.
It does sound like you want a Limited. I wouldn't worry about the stuff working. If you purchase a new one, it has a decent warranty.
