Coconut Grilled Pineapple
1 ripe golden pineapple or 1 can pineapple rings
1 can (14 ounces) unsweetened coconut milk
1 1/2 cups granulated sugar
1 tsp. ground cinnamon
1. Preheat grill to high.
2. If using fresh pineapple peel, slice, and core pineapple. Shake the coconut milk well before opening can. Pour milk into a wide, shallow bowl. Place the cinnamon and sugar in another wide, shallow bowl and stir with a fork to mix.
3. When grill is ready, brush and oil the grill grate. Dip each pineapple slice first into milk, then in the sugar mixture, shaking off excess between each dipping.
4. Arrange the slices on the hot grate and grill untl nicely browned on both sides. 4 to 6 minutes per side. If a crosshatch of grill marks is desired, rotate each slice 60 degrees after 2 or 3 minutes on each side.
5. Transfer slices to plates or a platter for serving. Pineapples can be served hot or cold.
Optional: Pineapples can be served in bowls with ice cream.

Beefy Cornbread Casserole
1 pound ground beef
1/2 cup frozen whole kernel corn
1 16oz jar salsa
1 10oz package corn bread mix or one 8 1/2oz package corn muffin mix
1 cup shredded cheddar cheese (4 oz)
In large skillet cook ground beef over medium heat untill meet is brown; Drain.
Stir in frozen corn and 1 1/2 cup of the salsa; heat through. Remove from heat; cover to keep warm.
Prepare corn bread batter according to package directions (do not bake). Spread half of the corn bread batter into a lightly greased 2-quart rectangular baking dish. Spoon meat mixture over batter; sprinkle with 1/2 cup of the cheese. Spoon remaining batter in mounds over cheese.
Bake uncovered in a 375* oven about 20 minutes or untill corn bread is golden. Sprinkle with remaining 1/2 cup cheese. Let stand for 5 minutes before serving.
Serve with remaining salsa.

Broccoli Rice Dish
1 can Campbells Mushroom Soup
1 cup rice cooked
1 frozen package Chopped Broccoli
Velvetta Cheese
Preheat oven to 350 degrees. Cook rice and broccoli as directed. Mix together and add mushroom soup and mix well together. Place in oven safe dish. Add slices of cheese on top of mixture and place in oven for 10 minutes. Remove from from oven, stir, and add a couple more slices of cheese. Place back in oven for 5 minutes. Stir and serve! This is a good dish for cookouts and as well as a side dish with dinner. Let me know if you try this or need help with this recipe.

apple pie moonshine
1 gallon apple juice not sugar free
1 gallon apple cider ( fresh if you can)
1 c. white sugar might need more based on quailty of cider
3-5 sticks cinnamon
1 bottle 190 proof grain alcohol (750 milliliter) or high grade vodka ( dont go cheap here it can ruin the tast)
In a large pot, combine all ingredients except the alcohol. Bring to a boil, remove and cool completely before adding the alcohol.
now add the alcohol little at a time, goal is that you dont taste it all some time i add less than a half gallon
drink warm or cooled
in fact im making some now for a later party

The moonshine apple pie sounds like a real party favorite.
Years ago when I was an agent with the Prudential insurance company I did something similar with cider, cinnamon, honey, cloves and rum. Not being a drinker the strength of my concoction was totally lost on me, I had others taste it to see if the alcohol was sufficiently hidden. Ron Rico Purple label(151), one quart rum, one quart cider, honey and spice to taste. I took a couple of gallons into work for the guys in the office. It was a very relaxed office that day. I made ten gallons and very little was left anywhere by the time Santa was coming down the chimney.

My daughters Thanksgiving leftover dish.
Butter a nice sized casserole pan(preferably glass), put a nice layer of stuffing on the bottom, then a layer of turkey, pour gravy over the turkey and stuffing, add any veggies you like(I don't want the veggies), then cover that with a nice layer of mashed potatoes. Stick in oven at 350 until it is warmed through and the potatoes get a nice brown crust on the top. Put on your plate with a dollop of cranberry sauce and enjoy.

6 strips of bacon fried and crumbled
1/2# ground meat browned
1/2c onion saute
1/2c ketchup
3/4c brown sugar
1 tsp. dry mustard
2 tsp. vinegar
1 16oz baked beans drain
1 16oz kidney beans drain
1 16oz butter beans drain
combine ingredients, bake @350 for 60 minutes
eat em all baked beans (cause they will all be eaten)

1loaf of party rye bread
fry the sausage and ground meat/ drain the fat. cube the velveeta and mix with the meat until melted.
Now the nice part, spoon meat cheese mix onto rye party bread. You can choose to go ahead and bake them @ 350 for ten minutes OR simply freeze them on a cookie tray and store them in a ziplok baggie for unexpected company then bake them as needed.

couple green onions/scallions
mix cream cheese with mixeruntil softened
add parm and mayo
stir in onion
as with above receipe place on party rye but this time
