It would depend on the body man's rates. I don't really know what they make, but 10 years ago the premium body guys were getting $100/hr. or better. I would imagine the prep work of stripping the old stuff would be a good bit less than that since the paint guy would farm that out to the hired help.
If you are going to have the complete body done I would suggest media blasting because sand ,even bead blasting ,creates heat that will distort your sheet metal. The media blasting uses plastic or sometimes crushed walnut shells and doesn't heat up. I don't know of any place to get this done here but I will ask around.
