this is a very popular swap not only for these trucks but a whole range of classic Fords. lots of articles on the internet on how to do it. lots of aftermarket wiring kits available to do this also. i would check sites like Jegs, Summit, Painless Wiring and Ford Racing to see what they offer. you can use the stock computer and wiring harness from the van but you would need a wiring diagram to figure out what wires to use and not to use. my opinion you are better off using an aftermarket ecu and wiring harness as they usually come with simplified wiring and instructions of how to hook it up and the ecu are usually programmable. you will also need to upgrade the fuel system to a hi pressure unit with return line.
the mustang engine is the same but different. uses a better intake and injector setup along with a better cam and factory headers. but there is such a huge aftermarket for these EFI 302/5.0 engines that i wouldn't be to worried about where i got the engine out of. you can make some decent power with the right selection of parts.
good luck

I am in the middle of collecting a Mustang EFI setup for my 68' Bronco. You can use Explorer parts as well and Ron Francis makes a killer harness that you can have them switch the sensor plugs to explorer or mustang, whichever you plan to use. Mustang setup and ECU is the most popular route as the explorer harness is OBDII.

and this one that is more Bronco specific but still very relevant.
