Dies when I put it in to gear.

I have a 73 f250 with a 360. It idles great but dies when I put it in to gear. It has a new carb, fuel pump, fuel filter, plugs, and wires. The choke is not hooked up, but is wired open just to rule that out. It's idling at around 1000 rpm. New gas. Any input as to why it is dying would be greatly appreciated. My knowledge is limited and I cannot afford to take it to the shop. Here's a link to some images of the engine in my profile.

Have you set the idle mixture, curb idle speed, choke index, fast idle index, and fast idle speed on this new carburetor? They are not intended to be set up out of the box.

This isn't "ruling out" an issue; it's causing an issue. You cannot expect the truck to warm up and stay running without the choke; it's there for a reason.

I noticed something else. I started it up just fine and let it warm up. When I got back into to truck I noticed that the rpm went down. I tried this several times, and each time I re-entered the truck after being out for a few minutes it would almost die as soon as my weight was on the drivers side. Then I put it into drive and coasted a few feet just fine. When I went to pull out of the driveway it died as soon as I got to the uphill section. It seems that this means something. Any ideas?
Thanks

Understood. Those are things I need to educate myself on further as far as how to do. Just wanted to make sure I was painting the best picture possible.
Thanks.
